The county was first made as a city in Mexico in 1834. In 1837, the Republic of Texas set it up as a county.

It is named after William Jasper, an American hero from the Revolutionary War.

The U.S. Census Bureau says that the county has a total area of 970 square miles (2,500 km2), of which 939 square miles (2,430 km2) are land and 31 square miles (80 km2) (3.2%) are water.
